DIY venue with lots of accomodation

Hi all!

My fiance and I are planning to get married in May 2017.

Maybe ambitious of us (!), but we are looking for:
- a venue we can hire for a weekend (2 nights, fri to sunday) but would consider mid-week over 2 days too
- a venue which we can make our own, basically a blank canvas as we want to decorate ourselves
- somewhere we can organise the catering and guests can bring their own drinks, without extortionate corkage charges
- accommodation on site for up to 80 people as we will have lots of guests coming from overseas

I have had a look on group accommodation.com which has brought up some good places, but just wondering if anyone has done anything similar and as any recommendations.

A wedding license would be nice but is not a priority as we can do the legal bit separately.

Any advice or recommendations would be greatly appreciated!

Am currently based overseas in Malaysia, moving back at the end of August.
Family are all over - Luton, Newcastle, Manchester, so no real base at the moment!
